Preheat your oven to 425°F (220°C).
Wash and cut the potatoes in half.

Add the halved potatoes to the bowl and toss until well coated.
Spread the potatoes on a baking sheet lined with parchment paper.

Roast the potatoes for 30-35 minutes, or until golden brown.
Remove from the oven and let them rest for 5 minutes.
Garnish with extra herbs or lemon wedges before serving.
