Preheat the oven to 400°F (200°C).
Roll out the puff pastry sheets on a floured surface.
Cut the pastry into rectangles, roughly 3x5 inches.
Mix the diced ham, shredded cheese, salt, pepper, and any optional herbs in a bowl.
Place a dollop of the filling on one half of each rectangle.
Fold the other half of the pastry over the filling and press to seal.
Brush each stick with a beaten egg before placing on a baking tray.
Bake in the preheated oven for 15-20 minutes, or until golden brown.
Allow the sticks to cool slightly before serving.
