  • 12 oz pasta penne or rigatoni
  • 8 oz smoked sausage sliced
  • 2 cups mozzarella cheese shredded
  • 1 cup heavy cream
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Cook the pasta according to package instructions until al dente, then drain.
  • In a large skillet, heat a drizzle of olive oil over medium heat and add the sliced smoked sausage.
  • Add minced garlic and cherry tomatoes, sautéing for 2-3 minutes until the tomatoes soften.
  • Pour in the heavy cream and stir in the oregano, then let it simmer for about 5 minutes.
  • Add the cooked pasta and mozzarella cheese to the skillet, tossing to combine.
  • If the sauce is too thick, add a bit of reserved pasta water to reach desired consistency.
  • Season with salt and pepper to taste, then remove from heat.
