Ingredients

  • 2 large sweet potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 4 ounces feta cheese crumbled
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wash and peel the sweet potatoes, then slice them into 1/2-inch rounds.
  • In a large bowl, combine the sweet potato rounds with olive oil, honey, sea salt, black pepper, and thyme.
  • Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  • Once done, remove from the oven and allow them to cool slightly.
  • Sprinkle the roasted sweet potatoes with crumbled feta and garnish with additional thyme if desired.
  • Drizzle any remaining honey over the top before serving.
