Preheat the oven to 400°F (200°C).
Wash and peel the sweet potatoes, then slice them into 1/2-inch rounds.
In a large bowl, combine the sweet potato rounds with olive oil, honey, sea salt, black pepper, and thyme.
Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, flipping halfway through.
Once done, remove from the oven and allow them to cool slightly.
Sprinkle the roasted sweet potatoes with crumbled feta and garnish with additional thyme if desired.
Drizzle any remaining honey over the top before serving.
