Line a baking dish with parchment paper.
In a food processor, blend the mixed nuts until coarsely chopped.
Add the pitted dates, dark chocolate chips, honey (or maple syrup), sea salt, and vanilla extract into the processor.
Pulse until the mixture is well combined and starts to form a sticky dough.
Transfer the mixture to the lined baking dish and press it evenly into the corners.
Bake for 15-20 minutes until slightly golden.
Let the bars cool completely in the pan before cutting.
Cut into squares or rectangles and sprinkle with a pinch of sea salt.
