In a bowl, toss the shrimp with the jerk seasoning until evenly coated.
Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
In the same skillet, add the diced pineapple, red onion, and jalapeno. Cook for 5-6 minutes until softened and slightly caramelized.
Return the shrimp to the skillet and toss with the pineapple mixture. Cook for an additional 1-2 minutes to heat through.
Warm the tortillas in a dry skillet or microwave. Fill each tortilla with the shrimp and pineapple mixture.
Top with chopped cilantro, a squeeze of lime juice, and salt and pepper to taste.
