How to Make Jerk Shrimp Tacos with Pineapple Salsa at Home

Ingredients

  • 1 lb shrimp peeled and deveined
  • 2 tbsp jerk seasoning
  • 1 cup diced pineapple
  • 1/2 red onion diced
  • 1 jalapeno seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 8 small flour tortillas
  • 1 lime cut into wedges
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • In a bowl, toss the shrimp with the jerk seasoning until evenly coated.
  • Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the diced pineapple, red onion, and jalapeno. Cook for 5-6 minutes until softened and slightly caramelized.
  • Return the shrimp to the skillet and toss with the pineapple mixture. Cook for an additional 1-2 minutes to heat through.
  • Warm the tortillas in a dry skillet or microwave. Fill each tortilla with the shrimp and pineapple mixture.
  • Top with chopped cilantro, a squeeze of lime juice, and salt and pepper to taste.
  • Serve hot and enjoy your jerk shrimp tacos with pineapple salsa!
