  • 4 boneless skinless chicken breasts

  • 1 cup cherry tomatoes halved
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cups fresh spinach roughly chopped

Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the seasoned chicken breasts to the skillet and sear for about 5-7 minutes per side until golden and cooked through.
  • Remove the chicken from the skillet and set aside on a plate.
  • Add cherry tomatoes to the same skillet and cook for 2-3 minutes until they soften.
  • Pour in chicken broth and heavy cream, stirring to combine and dissolve the thickened bits.
  • Return the chicken to the skillet, along with any juices on the plate, and let simmer for 5 minutes.
