Flavorful Seafood Stew Perfect for Cozy Nights

This hearty Seafood Stew blends fresh seafood with aromatic herbs and spices, creating a warm, inviting dish ideal for gatherings or cozy nights in.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 bell pepper diced
  • 1 carrot diced
  • 1 can 14 oz diced tomatoes
  • 4 cups seafood stock
  • 1 lb mixed seafood shrimp, mussels, fish
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add the diced onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic, diced bell pepper, and carrot. Cook for another 4-5 minutes.
  • Add the can of diced tomatoes and stir well, cooking for 3 minutes.
  • Pour in the seafood stock and bring the mixture to a simmer.
  • Add the mixed seafood, thyme, paprika, salt, and pepper.
  • Simmer the stew for 10-15 minutes, until the seafood is cooked through.
  • Taste and adjust seasoning before serving.
  • Serve hot, garnished with fresh parsley.
