Heat olive oil in a large pot over medium heat.
Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, diced bell pepper, and carrot. Cook for another 4-5 minutes.
Add the can of diced tomatoes and stir well, cooking for 3 minutes.
Pour in the seafood stock and bring the mixture to a simmer.
Add the mixed seafood, thyme, paprika, salt, and pepper.
Simmer the stew for 10-15 minutes, until the seafood is cooked through.
Taste and adjust seasoning before serving.
Serve hot, garnished with fresh parsley.
