Ingredients

  • 4 dried ancho chiles
  • 2 dried guajillo chiles
  • 1 lb beef chuck cut into cubes
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  • Prepare the chiles by removing stems and seeds.
  • Soak the chiles in hot water for 15 minutes.
  • Blend the soaked chiles with garlic and onions until smooth.
  • Brown the beef in a large pot over medium heat.
  • Add the blended chile mixture and beef broth to the pot.
  • Sprinkle in cumin, salt, and pepper; simmer for at least 1.5 hours.
  • Adjust seasoning and add water if necessary for desired consistency.
  • Serve hot, garnished with fresh herbs if desired.
