Embracing the Rich Flavors of Chile Colorado

- 4 dried ancho chiles
- 2 dried guajillo chiles
- 1 lb beef chuck cut into cubes
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 cups beef broth
- 1 tsp cumin
- Salt and pepper to taste
Prepare the chiles by removing stems and seeds.
Soak the chiles in hot water for 15 minutes.
Blend the soaked chiles with garlic and onions until smooth.
Brown the beef in a large pot over medium heat.
Add the blended chile mixture and beef broth to the pot.
Sprinkle in cumin, salt, and pepper; simmer for at least 1.5 hours.
Adjust seasoning and add water if necessary for desired consistency.
