Ingredients

  • 1 pound sushi-grade salmon diced
  • 2 cups cooked short-grain rice
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha
  • 2 teaspoons soy sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup green onions chopped
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon sesame seeds optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the sushi rice according to package instructions and allow it to cool slightly.
  • In a mixing bowl, combine the diced salmon, mayonnaise, Sriracha, soy sauce, rice vinegar, and green onions.
  • Gently fold in the cooked sushi rice until everything is well combined.
  • Transfer the mixture into a greased baking dish, spreading it evenly.
  • Sprinkle the panko breadcrumbs evenly over the top of the mixture.
  • Drizzle a bit of melted butter over the breadcrumbs for added richness.
  • Bake in the oven for about 25-30 minutes, or until the top is golden and crispy.
