In another large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Add in the egg, apple cider, and vanilla extract to the butter mixture, mixing until combined.
Gradually add the dry ingredients to the wet mixture, stirring just until combined.
Drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each.
Bake in the oven for 10-12 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Once cooled, place a spoonful of caramel sauce on the flat side of one cookie and top with another to form a sandwich.
