Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium-sized bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add in the egg, apple cider, and vanilla extract to the butter mixture, mixing until combined.
  • Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  • Drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each.
  • Bake in the oven for 10-12 minutes, or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Once cooled, place a spoonful of caramel sauce on the flat side of one cookie and top with another to form a sandwich.
  • Serve immediately or store in an airtight container.
