  • 1 cup apple cider
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped apples

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, combine the apple cider, granulated sugar, brown sugar, oil, and eggs. Mix well until combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing.
  • Fold in the chopped apples gently into the mixture, distributing them evenly.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove from the oven and allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and enjoy your apple cider cinnamon bread warm or at room temperature.
