Prepare your muffin tin with paper liners or grease it.
In a large bowl, mix together the mashed sweet potatoes, both sugars, and vegetable oil.
Add the eggs and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
Remove from the oven and allow to cool in the pan for 5 minutes before transferring to a wire rack.
