Roll out the crescent dough on a clean surface.
Spread a thin layer of Dijon mustard over the dough.
Layer the sliced ham evenly over the mustard.
Sprinkle the shredded cheese and chopped herbs on top.
Roll the dough tightly from one end to the other.
Slice the rolled dough into 1-inch thick pinwheels.
Place the pinwheels on a baking sheet lined with parchment paper.
Brush each pinwheel with beaten egg for a golden finish.
Bake in the preheated oven for 12–15 minutes or until golden brown.
Allow to cool slightly before serving.
