Preheat the oven to 425°F (220°C).
Wash and cut potatoes into fries.
Soak potatoes in cold water for 30 minutes.
Drain and pat the potatoes dry.
Toss fries with olive oil, garlic powder, salt, and pepper.
Spread fries evenly on a baking sheet.
Bake fries for 30-35 minutes, turning halfway through.
While the fries bake, cook the chicken.
Season chicken breasts with salt and pepper, then grill or pan-sear until cooked.
Toss cooked chicken with buffalo sauce.
Once fries are done, remove them from the oven and top with buffalo chicken and cheese.
Return to the oven for an additional 5-7 minutes until cheese is melted.
Remove from the oven, garnish with green onions, and serve immediately.
