Cook the rotini pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat and add the chicken breasts. Season with salt, pepper, and half of the Cajun seasoning.
Cook the chicken for about 5-7 minutes on each side, until fully cooked. Remove from skillet and slice into bite-sized pieces.
In the same skillet, add the minced garlic and remaining Cajun seasoning. Sauté for about 1 minute until fragrant.
Pour in the heavy cream, scraping the bottom of the skillet to deglaze it. Bring to a gentle simmer.
Add the cooked rotini and chicken to the skillet. Stir well to combine, and then mix in the shredded cheese until melted and creamy.
Taste and adjust seasoning with salt and pepper as needed. Serve hot and enjoy!
