Ingredients

  • 2 cups rotini pasta
  • 1 lb boneless skinless chicken breast
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheese Cheddar or Monterey Jack
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Cook the rotini pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat and add the chicken breasts. Season with salt, pepper, and half of the Cajun seasoning.
  • Cook the chicken for about 5-7 minutes on each side, until fully cooked. Remove from skillet and slice into bite-sized pieces.
  • In the same skillet, add the minced garlic and remaining Cajun seasoning. Sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, scraping the bottom of the skillet to deglaze it. Bring to a gentle simmer.
  • Add the cooked rotini and chicken to the skillet. Stir well to combine, and then mix in the shredded cheese until melted and creamy.
  • Taste and adjust seasoning with salt and pepper as needed. Serve hot and enjoy!
