If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
In a bowl, combine olive oil, soy sauce, lime juice, garlic powder, smoked paprika, salt, and pepper. Add chicken cubes and toss to coat. Marinate for at least 30 minutes.
Thread the marinated chicken onto skewers.
Preheat grill or grill pan to medium-high heat. Cook skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
Meanwhile, make the bang sauce by whisking together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
Remove chicken skewers from the grill and drizzle or brush with bang sauce.
Garnish with chopped green onions and serve immediately.
