Ingredients

1 large sweet onion (about 15 oz), peeled and ends trimmed

1 tablespoon butter (or vegan butter)

1 tablespoon extra virgin olive oil

1 teaspoon Cajun seasoning

¼ teaspoon salt (plus more to taste)

Optional additional seasonings:

¼ teaspoon garlic powder

¼ teaspoon Old Bay seasoning

Finely diced parsley leaves for garnish

Instructions
1️⃣ Preheat your oven to 375°F (190°C).
2️⃣ Using a small melon baller or spoon, scoop out the top center portion of the onion (about ⅓ of the way down) to create a well.
3️⃣ Place the onion on a sheet of aluminum foil.
4️⃣ Add the butter into the well of the onion.
5️⃣ In a small bowl, mix the olive oil with Cajun seasoning, salt, and any additional desired seasonings. Pour this mixture over the butter into the onion’s well, allowing it to drip down the sides.
6️⃣ Wrap the onion tightly in the aluminum foil.
7️⃣ Place the wrapped onion on a baking sheet and bake for 45–60 minutes, or until the onion is tender and caramelized.
8️⃣ Carefully unwrap the foil, garnish with finely diced parsley if desired, and serve hot.
