Ingredients

  • 1 pound lean ground beef

  • 1 packet taco seasoning

  • 5 burrito-sized tortillas

  • 1½ cups cooked rice (white, Spanish, or cilantro-lime)

  • 1 can (15 oz) refried beans

  • 2 cups shredded cheddar cheese, divided

  • 1 tablespoon unsalted butter

  • 2 tablespoons all-purpose flour

  • ½ cup low-sodium beef broth

  • 1 can (28 oz) red enchilada sauce

  • 1 teaspoon chili powder


Instructions

 

  1. Preheat Oven: Set your oven to 350°F (175°C).

  2. Cook Beef: In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and the specified amount of water from the seasoning packet. Simmer until thickened.

  3. Prepare Sauce: In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in beef broth and enchilada sauce. Add chili powder and simmer until the sauce thickens.

  4. Assemble Burritos: Lay out tortillas and fill each with refried beans, rice, seasoned beef, and 1½ cups of cheddar cheese. Fold in the sides and roll tightly.

  5. Bake: Place burritos seam-side down in a greased 13×9-inch baking dish. Pour the enchilada sauce over the burritos and sprinkle with the remaining cheese. Bake for 20 minutes, or until the cheese is melted and the burritos are heated through.
