  • 1 pound ground beef

  • 1 (1-ounce) packet taco seasoning

  • 1 (14.5-ounce) can diced tomatoes

  • 1 (20-ounce) package refrigerated cheese tortellini

  • 1 cup shredded cheddar cheese


Instructions

  • Cook the Beef:

    • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess fat.

  • Add Seasoning and Tomatoes:

    • Stir in the taco seasoning and diced tomatoes (with their juices). Mix well to combine.

  • Add Tortellini:

    • Add the cheese tortellini to the skillet. Stir to combine all ingredients.

  • Simmer:

    • Cover the skillet and let the mixture simmer for about 5 minutes, or until the tortellini is heated through and tender.

  • Add Cheese:

    • Sprinkle the shredded cheddar cheese over the top. Cover again and let it sit for a few minutes until the cheese is melted.

 

  • Serve:

    • Serve hot, garnished with your favorite taco toppings like sour cream, chopped green onions, or sliced jalapeños if desired.
