Swirled Rhubarb Bars Recipe: A Sweet & Tangy Dessert to Try

Crust:

  • 1 1/2 cups All-Purpose Flour

  • 1/4 cup Sugar

  • 1/2 teaspoon Salt

  • 3/4 cup Cold Butter, cubed

Filling:

  • 2 cups Rhubarb, chopped

  • 1/4 cup Water

  • 1 tablespoon Lemon Juice

  • 3/4 cup Sugar

  • 8 oz Cream Cheese, softened

  • 1/2 cup Sour Cream

  • 2 large Eggs

  • 1 teaspoon Vanilla Extract


Instructions

 

  1. Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper.

  2. Crust: Mix flour, sugar, and salt. Cut in butter until crumbly. Press into pan and bake 15 minutes.

  3. Rhubarb Sauce: In a saucepan, cook rhubarb, water, lemon juice, and 1/4 cup sugar over medium heat until soft. Blend until smooth. Cool slightly.

  4. Cream Cheese Layer: Beat cream cheese, sour cream, remaining sugar, eggs, and vanilla until smooth.

  5. Pour cream cheese mixture over baked crust. Drop spoonfuls of rhubarb sauce on top and swirl with a knife.

  6. Bake for 25–30 minutes until set. Cool completely, then chill before cutting into bars.
