Crust:

1 1/2 cups All-Purpose Flour

1/4 cup Sugar

1/2 teaspoon Salt

3/4 cup Cold Butter, cubed
Filling:

2 cups Rhubarb, chopped

1/4 cup Water

1 tablespoon Lemon Juice

3/4 cup Sugar

8 oz Cream Cheese, softened

1/2 cup Sour Cream
-
2 large Eggs
-
1 teaspoon Vanilla Extract
Instructions

Preheat oven to 350°F. Line a 9×13-inch baking dish with parchment paper.

Crust: Mix flour, sugar, and salt. Cut in butter until crumbly. Press into pan and bake 15 minutes.

Rhubarb Sauce: In a saucepan, cook rhubarb, water, lemon juice, and 1/4 cup sugar over medium heat until soft. Blend until smooth. Cool slightly.

Cream Cheese Layer: Beat cream cheese, sour cream, remaining sugar, eggs, and vanilla until smooth.

Pour cream cheese mixture over baked crust. Drop spoonfuls of rhubarb sauce on top and swirl with a knife.

Bake for 25–30 minutes until set. Cool completely, then chill before cutting into bars.
