Sweet Pea & Mint Crostini: A Refreshing and Delicious Appetizer Recipe

  • 1 baguette, sliced

  • 2 tablespoons butter

  • 1 teaspoon minced garlic

  • 2 cups ricotta cheese

  • 2 cups frozen peas

  • 1 cup fresh mint leaves

  • ½ cup olive oil

  • ¼ cup fresh orange juice

  • 1 teaspoon orange zest

  • Salt and pepper to taste


Instructions

 

  1. Preheat your oven to a low broil setting.

  2. Place the baguette slices on a baking sheet. Spread each slice with butter and a sprinkle of minced garlic.

  3. Broil the slices on a low rack for 2–3 minutes, or until they turn golden brown. Remove from the oven and let them cool.

  4. In a food processor, combine the frozen peas, fresh mint leaves, olive oil, fresh orange juice, salt, and pepper. Pulse until the mixture is blended but still slightly chunky. Taste and adjust seasoning if needed.

  5. Spread a generous layer of ricotta cheese onto each toasted baguette slice.

  6. Top each with the pea and mint mixture.

  7. Sprinkle orange zest over the top for a fresh finish.

  8. Serve immediately and enjoy!
