  • 4 ears of corn, kernels cut off

  • 1 English cucumber, diced

  • ¼ cup red onion, finely diced

  • ½ cup fresh basil, chopped

  • ½ cup fresh parsley, chopped

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • Salt and pepper to taste


Instructions

 

  1. In a large bowl, combine the fresh corn kernels, diced cucumber, and red onion.

  2. Add the chopped basil and parsley to the bowl.

  3. Drizzle with olive oil and squeeze fresh lemon juice over the salad.

  4. Season with salt and pepper to taste.

  5. Toss everything gently to combine. Chill for 20-30 minutes if desired before serving.
