  • 1 1/4 cups fresh strawberries, diced

For the Glaze:

  • 1 1/4 cups powdered sugar

  • 1/2 cup strawberries, chopped (not pureed)

  • 23 tablespoons lemon juice


Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F.
    Line a 9×9-inch baking dish with parchment paper, leaving some overhang for easy removal.

  2. Prepare the Crust:

    • In a large bowl, beat the softened butter and granulated sugar together until creamy and fluffy.

    • Add the egg and mix until well combined.

    • Stir in the lemon juice and lemon zest (if using).

    • In a separate bowl, whisk together the flour and baking soda.

    • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

    • Gently fold in the diced strawberries.

  3. Bake:

    • Spread the batter evenly into the prepared baking dish.

    • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

    • Allow the bars to cool completely in the pan on a wire rack.

  4. Prepare the Glaze:

    • In a small bowl, combine the powdered sugar, chopped strawberries, and lemon juice.

    • Mix until smooth and well combined.

  5. Glaze the Bars:

    • Once the bars have cooled, spread the glaze evenly over the top.

    • Allow the glaze to set before cutting into squares.
