Strawberry Coconut Milk Popsicles – Healthy, Refreshing, and Easy to Make

  • 1 lb fresh or thawed strawberries, hulled

  • 1 can (13.5 oz) full-fat coconut milk

  • 3 tablespoons maple syrup (or to taste)

  • 1 tablespoon fresh mint leaves (optional)


Instructions

 

  1. Blend strawberries, coconut milk, maple syrup, and mint in a blender until smooth.

  2. Taste and adjust sweetness if needed with more maple syrup.

  3. Pour the mixture into popsicle molds, tapping to remove air pockets.

  4. Insert sticks and freeze for at least 6 hours or overnight.

  5. To release, run molds under warm water for 30–45 seconds and gently remove.
