1 large bunch of spring radishes

8 oz European-style salted butter

6 sprigs fresh oregano, stems removed

4 sprigs fresh thyme, stems removed

1 small bunch of chives, thinly sliced

2 Meyer lemons

1 large pinch kosher salt

3 tbsp extra-virgin olive oil, plus more for drizzling

Freshly ground black pepper, to taste
Instructions
1️⃣ Wash the radishes thoroughly. Trim the tops and roots, and cut any large radishes into bite-sized pieces.
2️⃣ Cut the butter into small cubes and let it soften at room temperature for about 30 minutes.
3️⃣ In a mixing bowl, combine the softened butter with chopped oregano, thyme, and chives. Add the zest of the Meyer lemons and a pinch of kosher salt. Mix until well combined.
4️⃣ In a separate bowl, toss the prepared radishes with 3 tablespoons of olive oil, ensuring they are evenly coated.
5️⃣ Arrange the radishes on a serving platter. Dollop the herby Meyer lemon butter over the radishes.
6️⃣ Drizzle with additional olive oil and season with freshly ground black pepper to taste.
7️⃣ Serve immediately, allowing guests to spread the butter over the radishes as they eat.
