Spicy Serrano Pineapple Mocktail: A Refreshing and Fiery Summer Drink

Mocktail:

  • 1 serrano chile

  • 1/3 cup ripe pineapple chunks (or 1/4 cup pineapple juice)

  • 4 fresh mint leaves

  • 1/2 oz orange juice

  • Juice from 1/2 lime

  • 2 tsp honey or sugar (adjust to taste)

  • Ginger beer or seltzer, for topping

  • Ice cubes

Tajin Salt Rim:

  • 1/4 cup sea salt

  • 1 tsp Tajin seasoning

  • Small pinch of granulated sugar


Instructions

  1. Char the chile: Roast the serrano over a gas flame or in a dry skillet until blackened. Let it cool, then slice in half and remove seeds if you prefer less heat.

  2. Prepare the glass: Mix salt, Tajin, and sugar on a small plate. Rub a lime around the rim of a glass and dip it in the mixture.

  3. Muddle the base: In a shaker or jar, combine pineapple, mint, orange juice, lime juice, honey, and a few pieces of the chile. Muddle well to release all the flavors.

  4. Shake it up: Add ice to the shaker and shake for 30 seconds.

  5. Strain and serve: Strain into the prepared glass over ice.

  6. Finish with fizz: Top it off with ginger beer or seltzer and garnish with a sprig of mint and pineapple wedge if you’d like.
