- 1 ½ cups white whole wheat flour (or all-purpose flour)
- 1 ½ teaspoons baking powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- 1 ½ cups milk (or unsweetened non-dairy milk)
- 2 large eggs
- 2 cups shredded mozzarella cheese
- 1 cup turkey pepperoni, thinly sliced (reserve some for muffin tops)
- 12 teaspoons pizza sauce
Instructions

Prepare the Batter:
- Preheat your oven to 375°F (190°C).
- In a large bowl, whisk together the flour, baking powder, dried basil, dried oregano, and salt.
- Add the milk and eggs to the dry ingredients. Beat the eggs lightly and mix until just combined; do not overmix.
- Fold in the shredded mozzarella cheese and sliced turkey pepperoni, reserving some pepperoni slices for topping.

Assemble the Muffins:
- Grease a 12-count muffin tin or line it with paper liners.
- Spoon the batter evenly into the muffin cups, filling each about ¾ full.
- Place a teaspoon of pizza sauce on top of each muffin.
- Add a few reserved turkey pepperoni slices on top of each muffin for garnish.

Bake:
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
