Soft and Cheesy Pizza Puffs – Easy Bite-Sized Pizza Muffins

  • 1 ½ cups white whole wheat flour (or all-purpose flour)
  • 1 ½ teaspoons baking powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • 1 ½ cups milk (or unsweetened non-dairy milk)
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • 1 cup turkey pepperoni, thinly sliced (reserve some for muffin tops)
  • 12 teaspoons pizza sauce

Instructions

 

  1. Prepare the Batter:

    • Preheat your oven to 375°F (190°C).
    • In a large bowl, whisk together the flour, baking powder, dried basil, dried oregano, and salt.
    • Add the milk and eggs to the dry ingredients. Beat the eggs lightly and mix until just combined; do not overmix.
    • Fold in the shredded mozzarella cheese and sliced turkey pepperoni, reserving some pepperoni slices for topping.
  2. Assemble the Muffins:

    • Grease a 12-count muffin tin or line it with paper liners.
    • Spoon the batter evenly into the muffin cups, filling each about ¾ full.
    • Place a teaspoon of pizza sauce on top of each muffin.
    • Add a few reserved turkey pepperoni slices on top of each muffin for garnish.
  3. Bake:

    • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
    • Remove from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
