2 lbs boneless, skinless chicken thighs (or breasts)

1/2 to 1 cup Caesar dressing (adjust to taste)

1/2 cup shredded Parmesan cheese

1/4 cup chopped fresh parsley (or 2 tsp dried)

1/2 tsp ground black pepper

2 cups shredded romaine lettuce

12 slider buns or 4–6 regular hamburger buns

Cook the Chicken: Place the chicken in a 4-quart slow cooker with 1–2 cups of water or chicken broth. Cover and cook on low for 4–6 hours (3–4 hours if using breasts) until the chicken is tender and fully cooked.

Shred the Chicken: Remove the chicken from the slow cooker and shred it using two forks, discarding any excess fat. Drain the liquid from the slow cooker.

Mix Ingredients: Return the shredded chicken to the slow cooker. Add Caesar dressing, Parmesan cheese, chopped parsley, and ground black pepper. Stir until well combined.

Heat Through: Cover and cook on high for an additional 30 minutes, or until the mixture is heated through.

Assemble Sandwiches: Spoon the chicken mixture onto the buns. Top with shredded romaine lettuce and additional Parmesan cheese if desired.
