12 oz cauliflower rice (fresh or frozen)

8 oz breakfast sausage links, cooked and sliced

6 oz shredded Cheddar cheese, divided

4 oz chicken ham, chopped

1 small red bell pepper, chopped

10 large eggs

1/2 cup heavy whipping cream

3 cloves garlic, minced

1 tsp salt

1 tsp black pepper

1/2 tsp red pepper flakes (optional)

1 medium green onion, thinly sliced (for garnish)
Instructions

Grease the inside of a 6-quart slow cooker.

In the slow cooker, combine cauliflower rice, sliced sausage, 4 oz of shredded cheese, chopped chicken ham, and red bell pepper.

In a large bowl, whisk together eggs, heavy whipping cream, minced garlic, salt, black pepper, and red pepper flakes until well combined.

Pour the egg mixture over the cauliflower mixture in the slow cooker.

Sprinkle the remaining 2 oz of shredded cheese on top.

Cover and cook on low for 4 to 5 hours, until the edges are lightly browned and the center is set.

Allow the casserole to cool for 10 minutes before slicing and serving.

Garnish with sliced green onions before serving.
