Ingredients
For the Salad:

2 medium red beets, peeled and thinly shaved

2 medium carrots, peeled into ribbons

2 clementines or small oranges, peeled and sliced into rounds

4 cups baby arugula

1/4 cup sliced almonds, toasted
For the Citrus-Scallion Dressing:

1/4 cup fresh orange juice

2 tablespoons fresh lemon juice

1 tablespoon honey

2 tablespoons finely chopped scallions

1/4 cup olive oil

Salt and freshly ground black pepper, to taste

Prepare the Dressing: In a small bowl, whisk together the orange juice, lemon juice, and honey until the honey is dissolved. Stir in the chopped scallions. Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing. Season with salt and pepper to taste.

Assemble the Salad: In a large bowl, combine the shaved beets, carrot ribbons, and arugula. Gently toss to mix.

Add Citrus and Dressing: Add the clementine slices to the salad. Drizzle the citrus-scallion dressing over the salad and toss gently to coat all ingredients evenly.

Serve: Transfer the salad to a serving platter or individual plates. Sprinkle the toasted sliced almonds over the top. Serve immediately.
