Roasted Garlic Tomato Burrata Caprese – The Ultimate Summer Appetizer

Ingredients

  • 1 pint cherry tomatoes

  • 1 small shallot, peeled and quartered

  • 6 cloves garlic, peeled

  • 2 tablespoons extra virgin olive oil

  • 1 teaspoon fresh thyme leaves

  • Pinch of red pepper flakes

  • Salt and black pepper to taste

  • 2 balls (8 oz total) fresh burrata cheese, at room temperature

  • 1 cup fresh basil leaves

  • Toasted ciabatta bread or your favorite crackers, for serving


Instructions

 

  1. Preheat the Oven:

    • Set your oven to 400°F (200°C).

  2. Roast the Tomatoes and Garlic:

    • In a baking dish, combine cherry tomatoes, quartered shallot, and garlic cloves.

    • Drizzle with olive oil, and sprinkle with fresh thyme, red pepper flakes, salt, and black pepper.

    • Toss to coat evenly.

    • Roast in the preheated oven for about 20 minutes, or until the tomatoes burst and the garlic is soft.

  3. Prepare the Garlic Paste:

    • Remove the roasted garlic and shallot from the baking dish.

    • On a cutting board, mash them into a paste using the side of a knife.

    • Return the paste to the baking dish and stir to combine with the roasted tomatoes.

  4. Assemble the Salad:

    • Place the burrata cheese balls on a serving platter.

    • Spoon the warm roasted tomato and garlic mixture over the burrata.

    • Top with fresh basil leaves.

  5. Serve:

    • Serve immediately with toasted ciabatta bread or your favorite crackers.
