1 pint cherry tomatoes

1 small shallot, peeled and quartered

6 cloves garlic, peeled

2 tablespoons extra virgin olive oil

1 teaspoon fresh thyme leaves

Pinch of red pepper flakes

Salt and black pepper to taste

2 balls (8 oz total) fresh burrata cheese, at room temperature

1 cup fresh basil leaves

Toasted ciabatta bread or your favorite crackers, for serving
Instructions

Preheat the Oven:

Set your oven to 400°F (200°C).

Roast the Tomatoes and Garlic:

In a baking dish, combine cherry tomatoes, quartered shallot, and garlic cloves.

Drizzle with olive oil, and sprinkle with fresh thyme, red pepper flakes, salt, and black pepper.

Toss to coat evenly.

Roast in the preheated oven for about 20 minutes, or until the tomatoes burst and the garlic is soft.

Prepare the Garlic Paste:

Remove the roasted garlic and shallot from the baking dish.

On a cutting board, mash them into a paste using the side of a knife.

Return the paste to the baking dish and stir to combine with the roasted tomatoes.

Assemble the Salad:

Place the burrata cheese balls on a serving platter.

Spoon the warm roasted tomato and garlic mixture over the burrata.

Top with fresh basil leaves.
