Refreshing Pineapple Cucumber Salad with Lime Dressing Recipe

  • 1 ripe pineapple, peeled and cut into bite-sized chunks

  • 1 English cucumber, diced

  • ¼ small red onion, thinly sliced (optional)

  • 2 tablespoons fresh cilantro, chopped

  • Juice of 2 limes

  • 1 tablespoon honey

  • 1 tablespoon olive oil

  • Salt and black pepper, to taste

  • Optional: crumbled feta cheese or thinly sliced jalapeño for added flavor


Instructions

 

  1. Prepare the Produce:

    • Cut the pineapple into bite-sized chunks.

    • Dice the cucumber into similar-sized pieces.

    • If using red onion, slice it thinly. To mellow its sharpness, soak the slices in cold water for 5 minutes, then drain.

    • Chop the fresh cilantro.

  2. Make the Dressing:

    • In a small bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper until well combined.

    • Taste and adjust the seasoning as needed.

  3. Combine the Salad:

    • In a large bowl, gently toss together the pineapple, cucumber, red onion (if using), and cilantro.

    • Pour the dressing over the salad and mix gently to coat all ingredients evenly.

    • If desired, sprinkle crumbled feta cheese or thinly sliced jalapeño on top for added flavor.

  4. Chill and Serve:

    • For best flavor, cover and refrigerate the salad for 20–30 minutes to allow the flavors to meld.

    • Serve chilled as a refreshing side dish.
