1 ripe pineapple, peeled and cut into bite-sized chunks

1 English cucumber, diced

¼ small red onion, thinly sliced (optional)

Juice of 2 limes

1 tablespoon olive oil

Instructions

Prepare the Produce:

Cut the pineapple into bite-sized chunks.

Dice the cucumber into similar-sized pieces.

If using red onion, slice it thinly. To mellow its sharpness, soak the slices in cold water for 5 minutes, then drain.

Chop the fresh cilantro.

In a small bowl, whisk together the lime juice, honey, olive oil, salt, and black pepper until well combined.
