Pink Watermelon Lemonade: A Refreshing Summer Drink with a Twist of Thyme and Sparkle

Ingredients

  • 4 cups cubed seedless watermelon

  • 1/2 cup fresh lemon juice (about 3–4 lemons)

  • 1/3 cup honey

  • 1 tablespoon fresh thyme leaves

  • 1 cup cold water

  • 1–2 cups sparkling water (to taste)

  • Ice cubes

  • Fresh mint and watermelon slices, for garnish


Instructions

 

  1. Make the Watermelon Juice: In a blender, puree the cubed watermelon until smooth. Strain through a fine mesh sieve into a pitcher to remove pulp.

  2. Prepare Thyme Honey Syrup: In a small saucepan, combine honey, thyme, and 1 cup water. Bring to a simmer over medium heat, stirring until honey dissolves. Remove from heat and let steep for 10 minutes. Strain out thyme leaves.

  3. Mix the Lemonade: To the pitcher with watermelon juice, add fresh lemon juice and the thyme-infused honey syrup. Stir well to combine.

  4. Chill: Refrigerate the mixture for at least 1 hour to chill.

  5. Serve: Fill glasses with ice. Pour the watermelon lemonade over ice, filling about 2/3 of the glass. Top off with sparkling water for a fizzy finish.

  6. Garnish: Add fresh mint sprigs and watermelon slices to each glass.
