Almond Streusel:

  • 1/4 cup all-purpose flour

  • 1/4 cup almond flour

  • 2 tablespoons sugar

  • 1/8 teaspoon salt

  • 2 tablespoons unsalted butter, cold and cubed

  • 2 tablespoons sliced almonds

  • 1/4 teaspoon almond extract

Biscuit Topping:

  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 2 tablespoons unsalted butter, cold and cubed

  • 1/2 cup buttermilk

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon almond extract

Peach Filling:

  • 6 cups fresh peaches, peeled and diced

  • 1 tablespoon lemon juice

  • 1/2 cup brown sugar

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon

  • 2 tablespoons tapioca flour (or cornstarch)


Instructions

  • Make the Streusel:
    Mix flours, sugar, and salt. Cut in butter until crumbly. Stir in almonds and almond extract. Chill until ready to use.

  • Prepare Biscuit Topping:
    In a bowl, mix flour, sugar, baking powder, baking soda, and salt. Cut in butter until crumbly. Stir in buttermilk, vanilla, and almond extract until just combined.

  • Prepare Peach Filling:
    Preheat oven to 375°F. In a large bowl, mix peaches with lemon juice, brown sugar, salt, cinnamon, and tapioca flour. Spread into a greased 9-inch square baking dish.

  • Assemble Cobbler:
    Drop spoonfuls of biscuit dough over the peaches. Sprinkle the streusel on top.

  • Bake:
    Bake for 35–40 minutes, until top is golden and filling is bubbling. Let cool slightly before serving.

 

  • Serve:
    Delicious warm with vanilla ice cream or whipped cream!
