Biscuit Topping:

1 cup all-purpose flour

2 tablespoons sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 tablespoons unsalted butter, cold and cubed

1/2 cup buttermilk

1/2 teaspoon vanilla extract

1/4 teaspoon almond extract
Peach Filling:

6 cups fresh peaches, peeled and diced

1 tablespoon lemon juice

1/2 cup brown sugar
-
1/4 teaspoon salt

1/2 teaspoon cinnamon

2 tablespoons tapioca flour (or cornstarch)
Instructions

Make the Streusel:
Mix flours, sugar, and salt. Cut in butter until crumbly. Stir in almonds and almond extract. Chill until ready to use. -
Prepare Biscuit Topping:
In a bowl, mix flour, sugar, baking powder, baking soda, and salt. Cut in butter until crumbly. Stir in buttermilk, vanilla, and almond extract until just combined. -
Prepare Peach Filling:
Preheat oven to 375°F. In a large bowl, mix peaches with lemon juice, brown sugar, salt, cinnamon, and tapioca flour. Spread into a greased 9-inch square baking dish. -
Assemble Cobbler:
Drop spoonfuls of biscuit dough over the peaches. Sprinkle the streusel on top. -
Bake:
Bake for 35–40 minutes, until top is golden and filling is bubbling. Let cool slightly before serving.
