No-Bake Lemon Raspberry Icebox Cake: Easy, Refreshing, and Delicious Dessert

  • 1 box instant lemon pudding mix (3.4 oz)

  • 2 cups milk

  • 1 tub whipped topping (8 oz)

  • 1 sleeve graham crackers

  • 1 ½ cups fresh raspberries

  • Zest of 1 lemon (optional)


Instructions

 

  1. Whisk pudding mix with milk until thickened; fold in whipped topping.

  2. In a dish, layer graham crackers, pudding mixture, and raspberries.

  3. Repeat layers and top with remaining pudding and berries.

  4. Cover and chill in fridge at least 4 hours or overnight.
