Instructions

Heat olive oil in a large skillet over medium heat.

Season chicken with salt, pepper, and garlic powder, then cook until browned on both sides.

In a bowl, whisk together coconut milk, diced mango, lime juice, and honey.

Pour the sauce over the chicken, cover, and simmer for 15–20 minutes until the chicken is fully cooked and sauce thickens.
