  • 3 tablespoons oil
  • 1 pound ground beef
  • 1 sweet onion, chopped
  • 1 orange bell pepper, seeded and chopped
  • 3 garlic cloves, chopped
  • 1 can (14 ounces) fire-roasted diced tomatoes
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 1 small head green cabbage, cored and chopped
  • 2 cups shredded cheddar-jack cheese

Instructions

 

  1. Cook the Beef and Vegetables:

    • In a large pan or Dutch oven, heat the oil over medium-high heat.
    • Add the ground beef, chopped onion, and chopped orange bell pepper.
    • Cook until the beef is browned and the onions are translucent.
  2. Add Garlic and Seasonings:

    • Stir in the chopped garlic and cook for an additional minute until fragrant.
    • Add the fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper.
  3. Incorporate Cabbage:

    • Place the chopped cabbage on top of the beef mixture.
    • Cover the pan and cook for 15 to 20 minutes, or until the cabbage is tender.
  4. Add Cheese and Serve:

    • Sprinkle the shredded cheddar-jack cheese over the cabbage mixture.
    • Cover the pan until the cheese melts.
    • Serve hot.
