- 3 tablespoons oil
- 1 pound ground beef
- 1 sweet onion, chopped
- 1 orange bell pepper, seeded and chopped
- 3 garlic cloves, chopped
- 1 can (14 ounces) fire-roasted diced tomatoes
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper to taste
- 1 small head green cabbage, cored and chopped
- 2 cups shredded cheddar-jack cheese
Instructions

Cook the Beef and Vegetables:
- In a large pan or Dutch oven, heat the oil over medium-high heat.
- Add the ground beef, chopped onion, and chopped orange bell pepper.
- Cook until the beef is browned and the onions are translucent.

Add Garlic and Seasonings:
- Stir in the chopped garlic and cook for an additional minute until fragrant.
- Add the fire-roasted diced tomatoes, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper.

Incorporate Cabbage:
- Place the chopped cabbage on top of the beef mixture.
- Cover the pan and cook for 15 to 20 minutes, or until the cabbage is tender.

Add Cheese and Serve:
- Sprinkle the shredded cheddar-jack cheese over the cabbage mixture.
- Cover the pan until the cheese melts.
- Serve hot.
