2 pounds ground beef (80/20)
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 cup breadcrumbs
-
1 large egg
-
½ cup milk
-
¼ cup barbecue sauce
-
1 tablespoon Worcestershire sauce
-
1 teaspoon salt
-
½ teaspoon black pepper
For the Mashed Potatoes:
-
4 large russet potatoes, peeled and cubed
-
½ cup sour cream
-
¼ cup milk
-
2 tablespoons unsalted butter
-
1 teaspoon salt
-
½ teaspoon black pepper
For the Topping:
-
1½ cups shredded cheddar cheese
-
6 slices turkey bacon, cooked and crumbled
-
2 green onions, sliced (optional)
Instructions
-
Prepare the Meatloaf Base: Preheat your oven to 400°F. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, egg, milk, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until well combined.
-
Bake the Meatloaf Layer: Press the meat mixture evenly into a greased 9×13-inch baking dish. Bake for 20-25 minutes until mostly cooked through. Drain any excess grease.
-
Prepare the Mashed Potatoes: While the meatloaf is baking, boil the cubed potatoes in a large pot until tender, about 15-20 minutes. Drain, then mash with sour cream, milk, butter, salt, and pepper until smooth.
-
Assemble the Casserole: Spread the mashed potatoes evenly over the cooked meatloaf layer. Sprinkle the shredded cheddar cheese on top.
-
Bake Until Bubbly: Return the casserole to the oven and bake for another 15-20 minutes until the cheese is melted and bubbly.
-
Add the Final Touches: Remove from the oven, then sprinkle crumbled turkey bacon over the melted cheese. Garnish with green onions if desired.
-
Serve: Let it cool for a few minutes before slicing. Serve warm and enjoy!
