For the Meatloaf:

  • 2 pounds ground beef (80/20)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup breadcrumbs

  • 1 large egg

  • ½ cup milk

  • ¼ cup barbecue sauce

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed

  • ½ cup sour cream

  • ¼ cup milk

  • 2 tablespoons unsalted butter

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the Topping:

  • 1½ cups shredded cheddar cheese

  • 6 slices turkey bacon, cooked and crumbled

  • 2 green onions, sliced (optional)


Instructions

 

  1. Prepare the Meatloaf Base: Preheat your oven to 400°F. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, egg, milk, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until well combined.

  2. Bake the Meatloaf Layer: Press the meat mixture evenly into a greased 9×13-inch baking dish. Bake for 20-25 minutes until mostly cooked through. Drain any excess grease.

  3. Prepare the Mashed Potatoes: While the meatloaf is baking, boil the cubed potatoes in a large pot until tender, about 15-20 minutes. Drain, then mash with sour cream, milk, butter, salt, and pepper until smooth.

  4. Assemble the Casserole: Spread the mashed potatoes evenly over the cooked meatloaf layer. Sprinkle the shredded cheddar cheese on top.

  5. Bake Until Bubbly: Return the casserole to the oven and bake for another 15-20 minutes until the cheese is melted and bubbly.

  6. Add the Final Touches: Remove from the oven, then sprinkle crumbled turkey bacon over the melted cheese. Garnish with green onions if desired.

  7. Serve: Let it cool for a few minutes before slicing. Serve warm and enjoy!
