Lemon Herb Roasted Chicken Thighs: A Simple and Flavorful Recipe

  • 4 Bone-In, Skin-On Chicken Thighs

  • 2 tablespoons Olive Oil

  • 1 tablespoon Lemon Juice

  • 1 teaspoon Dried Basil

  • 1 teaspoon Dried Oregano

  • 1 teaspoon Dried Rosemary

  • Salt and Pepper to taste

  • 1 Lemon, sliced

  • Fresh Parsley for garnish (optional)


Instructions

 

  1. Preheat your oven to 400°F.

  2. In a small bowl, mix olive oil, lemon juice, basil, oregano, rosemary, salt, and pepper.

  3. Place chicken thighs in a baking dish and brush them with the herb mixture.

  4. Arrange lemon slices on top of the chicken.

  5. Bake for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is crispy.

  6. Garnish with fresh parsley before serving.
