  • 1 large head cauliflower, cut into florets

  • 3 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon lemon zest

  • 2 tablespoons lemon juice

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 2 tablespoons chopped fresh parsley (optional for garnish)


Instructions

 

  1. Preheat oven to 425°F.

  2. In a large bowl, toss cauliflower florets with olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper.

  3. Spread cauliflower in a single layer on a baking sheet lined with parchment paper.

  4. Roast for 25–30 minutes, stirring halfway, until golden and tender.

  5. Garnish with chopped parsley before serving if desired.
