Instructions

Preheat oven to 425°F.

In a large bowl, toss cauliflower florets with olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper.

Spread cauliflower in a single layer on a baking sheet lined with parchment paper.

Roast for 25–30 minutes, stirring halfway, until golden and tender.

Garnish with chopped parsley before serving if desired.
