Grilled Vegetable Salad Recipe – Healthy & Flavorful Veggie Delight

  • 2 Zucchinis, sliced

  • 1 Red Bell Pepper, quartered

  • 1 Yellow Bell Pepper, quartered

  • 1 Red Onion, sliced thick

  • 1 pint Cherry Tomatoes

  • 2 tablespoons Olive Oil

  • 1 teaspoon Italian Seasoning

  • Salt and Pepper to taste

  • 4 cups Mixed Greens

  • 1/4 cup Crumbled Feta Cheese

  • Balsamic Vinaigrette for dressing


Instructions

  • Preheat grill to medium-high heat.

  • Toss sliced vegetables with olive oil, Italian seasoning, salt, and pepper.

  • Grill vegetables for 3–5 minutes per side until charred and tender.

  • Slice grilled vegetables into bite-sized pieces.

  • Arrange mixed greens on a platter, top with grilled veggies, feta cheese, and drizzle with balsamic vinaigrette.

 

  • Serve immediately for a fresh, smoky salad!
