Grilled Chicken with Mango Avocado Salsa – A Flavorful & Healthy Recipe

For the Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 teaspoons chili powder
  • ¼ teaspoon kosher salt
  • Oil for brushing the grill

For the Mango Avocado Salsa:

 

  • 1 cup diced ripe mango
  • 1 cup diced Hass avocado
  • ¼ cup finely chopped red onion
  • 1 tablespoon finely chopped jalapeño pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • Salt and freshly ground black pepper, to taste

Instructions

 

  1. Prepare the Chicken:

    • Sprinkle the chili powder and salt evenly over both sides of the chicken breasts, pressing gently to adhere the seasoning.
  2. Grill the Chicken:

    • Preheat your grill or grill pan over medium-high heat and lightly brush with oil to prevent sticking.
    • Place the seasoned chicken breasts on the grill and cook for 4-5 minutes per side, or until the internal temperature reaches 165°F.
    • Once cooked, remove the chicken from the grill and let it rest for a few minutes to retain its juices.
  3. Prepare the Mango Avocado Salsa:

    • In a medium bowl, combine the diced mango, avocado, red onion, jalapeño, and cilantro.
    • Drizzle with fresh lime juice and season with salt and freshly ground black pepper to taste.
    • Gently toss the mixture to ensure all ingredients are well combined.
  4. Assemble and Serve:

    • Place the grilled chicken breasts on serving plates.
    • Spoon the mango avocado salsa generously over each piece of chicken.
    • Serve immediately, optionally garnished with lime wedges on the side.
