Ingredients

1 (20 oz) package refrigerated cheese tortellini

¾ cup prepared basil pesto

1 cup cherry tomatoes, halved

½ cup mozzarella balls (bocconcini), halved

¼ cup black olives, sliced

¼ cup red onion, thinly sliced

Salt and pepper to taste

Fresh basil for garnish (optional)
Instructions

Bring a large pot of water to a boil and cook tortellini according to package directions. Drain and rinse with cold water.

In a large bowl, combine cooked tortellini, cherry tomatoes, mozzarella, olives, and red onion.

Add pesto and toss gently to coat all ingredients evenly.

Season with salt and pepper to taste.

Chill for at least 30 minutes before serving. Garnish with fresh basil if desired.
