12 oz rotini or elbow pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup red bell pepper, diced

1/2 cup shredded cheddar cheese

1/4 cup red onion, finely chopped

1 cup Italian dressing (store-bought or homemade)

Salt and pepper to taste

Optional: 1/4 cup chopped parsley or basil
Instructions

Cook pasta according to package directions. Drain and rinse under cold water to cool quickly.

In a large bowl, combine cooled pasta, cherry tomatoes, cucumber, olives, bell pepper, red onion, and shredded cheese.

Pour Italian dressing over the salad and toss until everything is well coated.

Season with salt and pepper to taste.
