4 cups bread flour (or all-purpose if needed)

1½ cups warm water (110°F)

2¼ tsp instant yeast (1 packet)

2 tbsp sugar (or honey)

1½ tsp salt
For Boiling:

2 tbsp baking soda

1 tbsp honey (optional)
For Topping:

1 egg, beaten (for egg wash)

Everything seasoning, sesame, poppy seeds, or cinnamon sugar
Instructions
Step 1: Make the Dough

In a large bowl, whisk warm water, sugar, and yeast. Let sit for 5 minutes until frothy.

Add flour and salt. Mix until a rough dough forms.

Knead by hand or mixer with dough hook for 8–10 minutes until smooth and elastic.
Step 2: First Rise

Shape dough into a ball. Place in greased bowl, cover, and let rise 60–90 minutes until doubled in size.
Step 3: Divide & Shape

Punch down dough. Divide into 8 equal pieces.

Roll each into a ball, poke a hole in the center, and stretch into a bagel shape.

Place shaped bagels on parchment-lined tray, cover loosely, and rest 10–15 minutes.
Step 4: Preheat & Prep Water Bath

Preheat oven to 425°F.

Bring large pot of water to a gentle boil. Add baking soda and honey.
Step 5: Boil the Bagels

Gently lower bagels into water (2–3 at a time).

Boil 1 minute per side.
-
Use slotted spoon to remove and place on parchment.
Step 6: Add Toppings

Brush with egg wash.
-
Sprinkle desired toppings generously.
Step 7: Bake

Bake for 20–22 minutes or until golden brown.

Cool on wire rack before slicing.
