4 boneless skinless chicken thighs

4 medium russet potatoes, cut into chunks

3 tablespoons olive oil

4 garlic cloves, minced

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

⅓ cup grated Parmesan cheese

2 tablespoons chopped fresh parsley (optional)
Instructions

Preheat oven to 400°F and grease a large baking dish.

In a bowl, toss potatoes with half the olive oil, half the garlic, salt, pepper, and half the Parmesan.

In another bowl, coat chicken with the remaining olive oil, garlic, seasoning, and Parmesan.

Arrange chicken and potatoes in the baking dish in a single layer.

Bake uncovered for 35–40 minutes, or until chicken is fully cooked and potatoes are golden.

Sprinkle with fresh parsley and serve hot.
