Easy Asparagus Tart with Goat Cheese – A Simple, Elegant Recipe

Ingredients

  • 2 sheets frozen puff pastry

  • 2 large eggs (room temperature)

  • 8 oz herbed goat cheese (room temperature)

  • ¾ cup grated Pecorino Romano cheese

  • 1 lb asparagus, trimmed and peeled as needed

  • 1 tsp vegetable oil

  • ¼ tsp kosher salt

  • Zest of 1 lemon


Instructions

1️⃣ Preheat your oven to 400°F (200°C). Place a baking sheet on the center rack to preheat.

2️⃣ On a lightly floured surface, unfold the puff pastry sheets and gently roll them out to smooth creases. Place them on a piece of parchment paper.

3️⃣ Using a sharp knife, score a 1-inch border around the edges of the pastry without cutting through. This will create a raised edge when baked.

4️⃣ In a bowl, beat the eggs. In a separate bowl, mix the herbed goat cheese with half of the beaten eggs until smooth. Spread this mixture evenly within the scored border of the pastry.

5️⃣ Sprinkle the grated Pecorino Romano cheese over the goat cheese layer.

6️⃣ In a bowl, toss the asparagus with vegetable oil and kosher salt. Arrange the asparagus spears over the cheese mixture in a single layer.

7️⃣ Brush the edges of the pastry with the remaining beaten egg for a golden finish.

8️⃣ Carefully transfer the parchment paper with the assembled tart onto the preheated baking sheet in the oven. Bake for 30–35 minutes, or until the pastry is golden and puffed.

 

9️⃣ Remove from the oven and sprinkle the lemon zest over the top. Allow to cool slightly before slicing into squares or triangles. Serve warm or at room temperature.
