  • 4 Carrots, peeled and cut into sticks

  • 4 Parsnips, peeled and cut into sticks

  • 2 tablespoons Olive Oil

  • 2 tablespoons Honey

  • 1 teaspoon Dried Thyme

  • Salt and Pepper to taste


Instructions

 

  1. Preheat your oven to 400°F.

  2. In a large bowl, toss carrots and parsnips with olive oil, honey, thyme, salt, and pepper.

  3. Spread vegetables in a single layer on a baking sheet lined with parchment paper.

  4. Roast for 25–30 minutes, stirring halfway through, until tender and caramelized.
