6 large eggs

¼ cup milk (2% or whole)

½ teaspoon kosher salt

¼ teaspoon black pepper

1 tablespoon olive oil

1 cup asparagus, trimmed and cut into 1-inch pieces

1 cup cooked chicken ham, diced

½ cup shredded cheddar cheese

¼ cup green onions, sliced
Instructions

Preheat oven to 375°F.

In a medium bowl, whisk together eggs, milk, salt, and pepper.

In an oven-safe skillet, heat olive oil over medium heat. Add asparagus and cook for 3–4 minutes until slightly tender.

Add diced chicken ham and cook for another 2 minutes.

Pour the egg mixture evenly over the asparagus and chicken ham.

Sprinkle cheese and green onions over the top.

Cook on the stovetop for 2–3 minutes until the edges begin to set.

Transfer the skillet to the oven and bake for 10–15 minutes until the center is set and the top is lightly golden.

Let cool for a few minutes, then slice and serve!
